  • to 5 medium potatoes, peeled and diced - 4 item
  • small red onions, chopped - 2 item
  • butter or margarine - 2 Tbsp
  • all-purpose flour - 2 Tbsp
  • half and half - 1 c
  • Dijon mustard - 1 Tbsp
  • mayonnaise - 1/2 c
  • slices bacon, cooked and crumbled - 4 item
  • dried thyme leaves - 1 tsp
  • salt and pepper to taste - 1 item

How to make golden potato surprise:

Cook potatoes until tender; drain. Set aside. Melt butter in saucepan. Add onions. Saute over medium heat until tender, but not brown. Sprinkle with flour. Add salt and pepper. Slowly add half and half, cooking and stirring constantly until sauce thickens. Remove from heat. Cool slightly. Add mustard and mayonnaise. Stir until well blended. The sauce is thick and creamy. Turn potatoes into buttered 1 1/2 quart casserole. Cover with sauce. Bake at 350° for about 30 minutes. Sprinkle with bacon and thyme.
