Ingredients/Components

  • salt - 1/2 tsp
  • all-purpose flour - 2 Tbsp
  • butter or oleo - 2 Tbsp
  • Dijon mustard - 1 Tbsp
  • parsley flakes - 1 tsp
  • mayonnaise - 1/2 c
  • black pepper - 1/2 tsp
  • half and half cream - 1 c
  • slices bacon, cooked and crumbled - 4 item
  • red onions, chopped - 2 item
  • to 5 medium potatoes, peeled and diced - 4 item
  • water and salt - 1 item

How to make golden potato surprise:

Cover potatoes with boiling, salted water. Cover and simmer for about 15 minutes or until fork-tender. Drain. Set aside. Saute onions in butter or oleo. Sprinkle with flour, salt and pepper. Slowly add half and half. Cook, stirring, until sauce thickens. Remove from heat. Cool slightly. Add mustard and mayonnaise. Stir until well blended. The sauce is thick and creamy. Place potatoes in buttered casserole dish. Cover with sauce. Bake at 350° for 30 minutes. Sprinkle with bacon and parsley.
