Ingredients/Components

  • salt - 1/2 tsp
  • pepper - 1/8 tsp
  • chopped celery - 1/4 c
  • chopped pimento - 2 Tbsp
  • saltine crackers, crushed - 18 item
  • shredded sharp cheese - 1/2 c
  • cream or evaporated milk - 1 c
  • peeled, cubed eggplant

How to make golden eggplant casserole:

Cook eggplant in boiling salted water for 10 minutes. Drain. Combine with remaining ingredients. Turn into 1-quart casserole. Bake in moderate oven at 350° for 45 minutes. Serves 6.
