Golden eggplant casserole
Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/8 tsp
- chopped celery - 1/4 c
- chopped pimento - 2 Tbsp
- saltine crackers, crushed - 18 item
- shredded sharp cheese - 1/2 c
- cream or evaporated milk - 1 c
- peeled, cubed eggplant
How to make golden eggplant casserole:
Cook eggplant in boiling salted water for 10 minutes. Drain. Combine with remaining ingredients. Turn into 1-quart casserole. Bake in moderate oven at 350° for 45 minutes. Serves 6.Recipe categories: Side dish, Cheese, Eggplant.
