German potato salad
Ingredients/Components
- medium sized potatoes - 4 item
- to 8 pieces bacon, dived - 6 item
- chopped onion - 1/4 c
- enriched flour - 1 Tbsp
- sugar - 1 Tbsp
- salt
- dash of pepper - 1 item
- vinegar - 1/3 c
- water - 1/4 c
- hard-cooked sliced eggs - 3 item
- chopped parsley - 1 Tbsp
- celery seed - 1/2 tsp
How to make german potato salad:
Boil potatoes with jackets in boiling salt water until tender. Put in colander to drain and cool. When cool, peel and slice. Set aside. Meanwhile, fry bacon in heavy iron skillet. When the pieces are browned, remove from the skillet and place on paper toweling to drain.Now reduce the heat to low. Add chopped onion and brown slightly. Mix water and vinegar together and pour this slowly into the skillet, stirring all the while. When this is well blended, add the flour, sugar and salt combination. This will begin to thicken almost immediately. When this happens, remove skillet from stove and add sliced potatoes. Pour potato salad in a bowl and sprinkle with parsley, celery seed, pepper, sliced eggs and crumbled bacon. Serves 5.
