- torn romaine lettuce - 4 c
- olive oil - 1 tsp
- Feta cheese, crumbled - 6 oz
- safflower oil - 3/4 c
- uncooked orzo macaroni - 1/2 c
- Toss lightly with 1 teaspoon olive oil to avoid clumping
How to make greek confetti salad:
Cook macaroni according to directions and cool in refrigerator. Toss lightly with 1 teaspoon olive oil to avoid clumping. Add colorful veggies, chopped (example: halved cherry tomatoes, red and yellow peppers, olives).
