Ingredients/Components
- carrots - 2 lb
- medium onion chopped fine - 1 item
- green pepper chopped fine - 1/2 item
- cup sugar - 1/2 item
- cup vinegar - 1/2 item
- cup corn oil - 1/2 item
- carrots, cut in long 1-inch strips - 1 item
How to make copper pennies:
Slice carrots crosswise and cook in salted water 10 minutes. Drain and cool. Add onion and green pepper. Cook together 5 minutes. Add sugar, vinegar, corn oil, tomato soup, let marinate for 24 hours or longer. Will keep for 3 weeks in refrigerator.Recipe categories: Low protein, Low sodium, Salads.
