Ingredients/Components

  • sugar - 2 3
  • salt - 3/4 tsp
  • flour - 1 Tbsp
  • water - 1/3 c
  • vinegar - 3 Tbsp
  • chopped onion - 1/3 c
  • dash of pepper - 1 item
  • medium potatoes - 2 item
  • celery seed - 1/4 tsp
  • slices bacon - 3 item

How to make hot german potato salad:

Boil potatoes in skins. Peel, slice thinly or dice. Fry bacon slowly. Drain on paper towels. Crumble and set aside. Saute onions in bacon drippings until golden brown. Blend in flour and all seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat. Stir in water and vinegar. Bring to boil, stirring constantly. Boil 1 minute. Fold in potatoes and crumbled bacon carefully. Remove from heat. Cover; let stand until ready to serve. Serves 2.

Note: For large crowd, triple sauce and use 12 to 14 potatoes. One or two chopped hard-boiled eggs may be sliced on top. Salt and pepper to taste. Best cooled and reheated at serving time. Also freezes well if no eggs in it.
