Garden pasta
Ingredients/Components
- linguini - 1/2 lb
- olive oil - 1/4 c
- clove garlic, minced - 1 item
- tomatoes, chopped - 1 lb
- medium onion, coarsely chopped - 1 item
- fresh spinach, torn in pieces - 1/2 lb
- Parmesan cheese, grated - 1/4 c
- salt and pepper to taste - 1 item
How to make garden pasta:
Heat oil in large frying pan and saute garlic and onion over medium heat for 2 minutes or until slightly golden. Add tomatoes; stir and cook for 3 minutes.Add spinach; toss with tomato mixture until spinach is just wilted. Turn off heat. When pasta is finished cooking, drain and add to pan. Toss with vegetables over medium heat until coated. Serve hot, sprinkled with Parmesan and seasoned with salt and pepper to taste.
