Ingredients/Components

  • half and half - 1 c
  • pkg - 1 oz
  • salt - 1/2 tsp
  • melted butter - 3 Tbsp
  • all-purpose flour - 1/4 c
  • pepper - 1/4 tsp
  • cloves garlic, minced - 2 item
  • shredded Swiss cheese - 2 c
  • large onion - 1 item
  • dried whole rosemary - 1/2 tsp
  • medium sweet red pepper - 1 item
  • strips sweet red pepper - 16 item
  • small baking potatoes unpeeled, sliced - 6 item

How to make garden casserole:

Cut red pepper in strips. Saute first 3 ingredients in butter until crisp-tender. Add flour. Cook 1 minute, stirring constantly.

Spoon half of onion mixture into lightly greased 13 x 9 x 2-inch baking dish. Layer half of potato slices, green beans and cheese over onion mixture. Repeat.

Combine half and half with next 3 ingredients; pour over vegetables. Cover and bake at 375° for 1 hour or until potatoes are tender.

Sprinkle with remaining cheese and garnish with 16 red pepper strips. Bake an additional 5 minutes. Yields 8 to 10 servings.
