  • salt - 1/8 tsp
  • cold water - 7 Tbsp
  • all-purpose flour - 1 c
  • large eggs - 2 item
  • margarine - 6 Tbsp
  • pepper - 1/8 tsp
  • whole wheat flour - 1 c
  • Swiss cheese, grated - 1/2 c
  • few grains nutmeg - 1 item

How to make spinach quiche:

Filling:1 (10 oz.) pkg. chopped, frozen spinach, thawed and squeezed thoroughly dry1/8 tsp. pepper1/2 c. Swiss cheese, grated1 c. half and half2 large eggs1/2 tsp. salt few grains nutmeg Heat oven to 375°. Mix flours and salt in bowl. Cut in butter with a pastry blender or two knives. Gradually add water, stirring with a fork until mixture clumps together. Shape dough into a ball and then flatten. Roll out 1/8-inch thick between 2 pieces of wax paper. Cut into 12 (3 1/2-inch) circles. Press into tart pans or lightly buttered muffin pans. Sprinkle cheese and spinach in tart shells. Beat remaining ingredients; pour over spinach and cheese. Bake 25 minutes or until puffed and a wooden pick inserted in center comes out clean. Cool 10 minutes. Remove from pans. Cool on wire racks. Makes 12 small quiches, 195 calories each.
