  • lemon juice - 1 Tbsp
  • honey - 1/2 c
  • salad oil - 2 Tbsp
  • pitted prunes - 1 c
  • wheat germ - 1/2 c
  • soy flour - 1/4 c
  • mixed dried fruit, chopped - 2 c
  • chopped pitted dates - 3/4 c
  • apple cider or apple juice - 2/3 c
  • bran - 1/4 c
  • milk powder - 1/2 c
  • low-fat granola cereal - 1 c
  • chopped almonds, walnuts and Brazil nuts - 1/2 c
  • enough apple juice to make a thick batter - 1 item
  • medium-size Golden Delicious apples - 8 item

How to make fruit pemmican:

About 1 1/2 hours before serving, or early in day, prepare crumble topping. In small bowl, with fork, stir together granola, salad oil, 1/4 cup packed brown sugar and 1/4 cup flour until blended; set aside.

Preheat oven to 400°. Peel and core apples; cut into 1/4-inch slices. Coarsely chop prunes. In large bowl, toss apples, prunes, apple cider, lemon juice, 1/3 cup packed brown sugar and 1/4 cup flour until the apple slices are evenly coated. Spoon apple mixture into shallow 3-quart glass or ceramic baking dish. Sprinkle granola mixture over apple mixture. Cover with foil and bake 40 minutes. Remove foil; bake 20 minutes longer or until apples are tender and crumble topping is browned. Cool slightly on wire rack to serve warm. Or cool completely to serve later. Makes 12 servings.
