Ingredients/Components

  • cooking oil - 8 Tbsp
  • beaten eggs - 3 item
  • pepper - 1/4 tsp
  • soy sauce - 2 Tbsp
  • salt optional - 1 tsp
  • rice see directions - 1 c
  • large mushrooms, diced - 6 item
  • any diced ham, shrimp, bacon, pork - 1/2 1

How to make fried rice:

Cover rice with water and put lid on pan. Put on medium heat until pan lid is hot. Turn heat down to very low. No salt. Cook for 35 minutes. Fluff with fork. Cool with lid off. Put in refrigerator overnight.

Heat 1 tablespoon oil in large frying pan. Cook beaten eggs, turning over. Cool and dice in strips. In same pan, cook meat, mushrooms and onion for one minute, adding oil as needed. Add rice, eggs, salt, pepper and soy sauce. Stir-fry 8 minutes. Stir constantly, adding oil as needed.
