  • milk - 1/2 c
  • salt - 1/4 tsp
  • flour - 1/2 c
  • egg - 1 item
  • salt and pepper to taste - 1 item
  • oil or shortening - 3 Tbsp
  • rabbit - 1 item
  • Wipe the rabbit with clean, damp cloth and cut into pieces of the right size for serving

How to make fried rabbit:

Beat eggs, milk and salt and blend with flour to make a smooth batter. Wipe the rabbit with clean, damp cloth and cut into pieces of the right size for serving. Dip each piece of rabbit into this batter and be sure it's thoroughly coated.

In an iron skillet heat well flavored fat until it is hot enough to set the batter quickly. Just brown the rabbit evenly, then reduce heat and cook at lower temperature 20 to 30 minutes or until tender.Rabbit Gravy:2 Tbsp. pan drippings from fried rabbit1 1/2 Tbsp. flour1 c. milk salt and pepper to taste For each cup of gravy desired, use listed ingredients. Blend fat and flour thoroughly in the skillet. Add cup of milk with seasonings and stir until thickened. If it gets too thick, you may add a little water or more milk.
