  • milk - 2 Tbsp
  • salt - 3/4 tsp
  • flour - 4 Tbsp
  • butter - 2 Tbsp
  • egg - 1 item
  • salt and pepper to taste - 1 item

  • oil for frying - 3 Tbsp
  • fresh white bread crumbs - 1/3 c
  • each pepper and paprika - 1/8 tsp
  • Sauce:1 red pepper, diced

How to make chicken maryland:

Sauce:1 red pepper, diced2 Tbsp. butter2 Tbsp. flour1 1/2 c. half and half salt and pepper to taste Rinse chicken; pat dry. Cut into serving pieces. In plastic bag combine flour, salt, pepper and paprika. Add chicken pieces. Shake bag until chicken is coated. Beat egg with milk. Dip chicken in mixture, then dip in bread crumbs; set aside. In skillet heat butter until brown or oil reaches 375°. Add chicken, a few pieces at a time. Fry over medium heat until chicken is crispy brown and tender, about 15 minutes. Turn pieces over for even browning.

For Sauce: Melt butter in a saucepan; add pepper. Saute for a few minutes. Sprinkle with flour. Stir to combine. Add half and half, a little at time, until blended. Bring to a boil. Cook for 3 to 5 minutes, stirring. Season to taste. Place hot chicken on a plate. Serve sauce alongside. Good served with steamed rice or noodles, string beans and red or white wine.
