Fresh tomato basil pasta sauce
Ingredients/Components
- butter or margarine - 1/2 c
- salt - 1 item
- chicken broth - 1/4 c
- Parmesan cheese, grated - 1 item
- large garlic cloves, minced - 2 item
- freshly ground black pepper - 1 item
- dry white vermouth - 1/4 c
- medium ripe tomatoes, cut into 1-inch cubes - 3 item
- roughly chopped fresh basil leaves - 2/3 c
- chopped fresh basil leaves for garnish - 3 Tbsp
How to make fresh tomato basil pasta sauce:
Melt butter or margarine in a medium, noncorrosive skillet. Add garlic and tomatoes; cook for 5 minutes, or until tomatoes are softened. Add vermouth and cook on high heat until slightly thickened, about 4 minutes. Add chicken broth and continue to cook on high heat for 2 minutes longer, or until sauce thickens slightly.Stir in pepper, salt and basil. Taste for seasoning. Toss with cooked pasta in a serving bowl and garnish with basil. Pass grated Parmesan cheese for each person to sprinkle to taste. Serves 4.
