  • boneless chicken breast halves - 4 item
  • salt - 1/2 tsp
  • pepper - 1/4 1/2
  • olive or salad oil - 2 Tbsp
  • butter or margarine - 2 Tbsp
  • chopped fresh chives or green onion - 3 Tbsp
  • chopped parsley - 3 Tbsp
  • Dijon-style mustard - 2 tsp
  • chicken broth - 1/4 c

How to make chicken breasts diane:

Pound breasts slightly between sheets of waxed paper. Sprinkle with salt and pepper. Heat 1 tablespoon each of oil and butter in a large skillet. Cook chicken over high heat for 4 minutes on each side. Transfer to warm serving platter. Add remaining ingredients to pan and cook for 15 seconds, whisking constantly. Whisk in broth and stir until sauce is smooth. Whisk in remaining butter and oil. Pour sauce over chicken. Serve immediately.
