  • eggs - 2 item
  • salt - 1 tsp
  • flour - 3 c
  • nutmeg - 1 tsp
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • shortening - 1/2 c
  • dark brown sugar - 1 c
  • nuts - 1/2 c
  • raisins - 1/2 c
  • dates - 1/2 c
  • fresh ripe tomatoes, peeled, seeded and chopped - 2 c

How to make fresh tomato cake:

Cream together the brown sugar and shortening. Add the eggs and next 5 ingredients. Stir in and mix well the tomatoes, nuts, dates and raisins. Mix well. Pour into greased and floured 9 x 13-inch pan. Bake at 350° for 35 minutes, or until done.
