Ingredients/Components

  • dark brown sugar - 1 c
  • shortening
  • eggs - 2 item
  • flour - 3 c
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • nutmeg - 1 tsp
  • salt - 1 tsp
  • fresh ripe tomatoes, peeled, seeded and chopped - 2 c
  • chopped nuts - 1/2 c
  • chopped dates - 1/2 c
  • chopped raisins - 1/2 c

How to make fresh tomato cake:

Cream sugar and shortening. Add eggs. Add sifted dry ingredients, mixing well. Stir in tomatoes, nuts, dates and raisins. Put into greased and floured 9 x 13-inch baking pan. Bake at 350° for 35 minutes or until cake tests done. Frost with cream cheese frosting.
