Ingredients/Components
- dark brown sugar - 1 c
- shortening
- eggs - 2 item
- flour - 3 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- nutmeg - 1 tsp
- salt - 1 tsp
- fresh ripe tomatoes, peeled, seeded and chopped - 2 c
- chopped nuts - 1/2 c
- chopped dates - 1/2 c
- chopped raisins - 1/2 c
How to make fresh tomato cake:
Cream sugar and shortening. Add eggs. Add sifted dry ingredients, mixing well. Stir in tomatoes, nuts, dates and raisins. Put into greased and floured 9 x 13-inch baking pan.
