  • sugar - 1/3 c

  • vanilla - 1 tsp
  • whole milk - 2 c

How to make flan:

In a medium nonstick frypan, heat the sugar over medium heat, tilting and shaking pan often, until sugar melts and turns a pale amber color (about 8 minutes). Watch closely since sugar scorches easily. Immediately pour caramel syrup into a round 1-quart baking dish, tilting to coat bottom and 1/2-inch of sides. Place dish in a larger pan, such as an 8-inch or 9-inch square pan and set aside.

In a medium bowl, beat eggs, sugar and vanilla until blended but not frothy. Stir in milk. Pour egg mixture into caramel coated dish. Pour boiling water into larger pan to depth of about 1-inch. Bake on middle rack of a 350° oven for 40 minutes. Custard will jiggle in center slightly when dish is shaken. Lift custard from hot water and let cool on a rack. Then cover and refrigerate until cold (at least 2 hours) for up to 2 days.

To serve, run knife between flan and dish. Invert a rimmed serving plate over flan, hold securely and quickly invert both. Caramel syrup will flow over flan. Lift off dish. Cut flan into wedges. Spoon caramel over each serving.
