Ingredients/Components

  • milk - 3/4 c
  • flour - 3 Tbsp
  • egg, beaten - 1 item
  • salt to taste - 1 item
  • red pepper to taste - 1 item
  • onions, chopped fine - 6 8
  • black pepper to taste - 1 item
  • cracker meal - 1 item
  • crackers, crushed - 20 item
  • block oleo - 3/4 item
  • fish meat boneless - 1 lb
  • fresh green onion and parsley to taste - 1 item

How to make fish patties:

Bring pot of water to full boil (enough to cover fish). Drop in fish. Leave only until rawness is out and fish turns white. Drain fish; season while still warm. Break into small pieces.

Saute onions in margarine; add flour and stir well. Slowly add milk to make thick white sauce.

Mix fish, seasoning, egg and cracker crumbs. Add white sauce (enough to be able to shape into balls or patties). Chill in refrigerator for several hours.

At time of cooking, form into patties. Coat with cracker meal. Fry until brown. (You can substitute shrimp, crab or crawfish for the fish.)
