Fish chowder
Ingredients/Components
- margarine - 2 Tbsp
- chicken broth
- dash of pepper - 1 item
- parsley - 1 tsp
- stalks celery, finely chopped - 2 item
- medium onion, chopped - 1 item
- sliced carrots - 2 item
- thyme optional - 1/4 tsp
- large potatoes, peeled and cubed - 2 item
- medium shrimp - 1/2 lb
- V-8 juice - 18 oz
- cod, scrod or halibut - 1 lb
How to make fish chowder:
Peel and slice carrots, onions and celery. Saute them in margarine in a large pot (about 5 minutes). Add the potatoes, chicken broth, V-8 juice, thyme, parsley and pepper. Bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes.Rinse fish and cut into 1/2-inch chunks. Rinse shrimp. Add fish and shrimp to soup. Cook 10 minutes until fish is done. Makes 4 to 6 servings.
