Ingredients/Components
- milk - 1/2 c
- flour
- brown sugar
- cornstarch - 1 tsp
- baking soda - 2 tsp
- boiling water - 1/2 c
- Crisco - 1/2 c
- cream of tartar - 2 tsp
- egg, beaten - 1 item
- chopped raisins - 1 c
- Mix well
- juice and grated rind of 1 lemon
How to make filled cookies:
Cream sugar and shortening together; add milk, then egg. Mix well. Put flour, soda and cream of tartar into flour sifter and sift into the batter. Then mix or beat until all is well mixed. Chill the dough; overnight is best, but for a few hours at least. Then roll it thin, cut with floured cookie cutter and place on greased cookie sheet.Filling:1/2 c. brown sugar1/2 c. boiling water juice and grated rind of 1 lemon1 tsp. cornstarch1 c. chopped raisins Cook filling ingredients together until thick. Let cool, then spread on half the cookies. Cover with another cookie.
