Enchilada casserole
Ingredients/Components
- pkg - 1 1/4
- salt - 1 tsp
- water - 1/2 c
- 8 oz - 2 c
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- ground beef - 1 lb
- can tomato paste - 1 oz
- can tomatoes - 1 oz
- corn tortillas - 12 item
How to make enchilada casserole:
Brown ground beef and drain. Add remaining ingredients except cheese and tortillas. Simmer 10 minutes. Place rounded tablespoonfuls of meat mixture and cheese in each tortilla; roll up tightly. Place seam side down in a 12 x 8-inch baking dish. Top with remaining meat mixture. Cover tightly with foil. Bake in a 375° oven for 25 minutes.
