Eggplant patties
Ingredients/Components
- salt - 1 tsp
- flour - 1/2 c
- water - 1/2 c
- eggs, beaten - 2 item
- pepper - 1/4 tsp
- soft bread crumbs - 1 c
- dried basil - 1 tsp
- dash of nutmeg - 1 item
- large eggplant - 1 item
- grated cheese dry - 3 Tbsp
How to make eggplant patties:
Cut washed, unpared eggplant in eighths and steam in water about 20 minutes or until tender. Drain; chop fine. Add remaining ingredients. Drop by spoonfuls on lightly greased griddle and fry on both sides until brown. Serve with tomato sauce, if desired.Recipe categories: Vegetables, Main dish, Greek.
