  • salt - 1 tsp
  • flour - 1/2 c
  • water - 1/2 c
  • eggs, beaten - 2 item
  • pepper - 1/4 tsp
  • soft bread crumbs - 1 c
  • dried basil - 1 tsp
  • dash of nutmeg - 1 item
  • large eggplant - 1 item
  • grated cheese dry - 3 Tbsp

How to make eggplant patties:

Cut washed, unpared eggplant in eighths and steam in water about 20 minutes or until tender. Drain; chop fine. Add remaining ingredients. Drop by spoonfuls on lightly greased griddle and fry on both sides until brown. Serve with tomato sauce, if desired.
