Eggplant patties
Ingredients/Components
- salt - 1/2 tsp
- cooking oil - 2 Tbsp
- beaten eggs - 2 item
- pepper - 1/8 tsp
- clove garlic, minced - 1 item
- snipped parsley - 2 Tbsp
- sliced onions - 2 Tbsp
- shredded sharp processed American cheese
- medium eggplant, pared and cubed - 1 item
- Ritz cracker crumbs approximately 20
How to make eggplant patties:
In covered saucepan cook eggplant in boiling water until tender, about 5 minutes; drain well and mash. Stir in crumbs, cheese, egg, parsley, onion, garlic, salt and pepper. Shape into 8 patties about 3-inches in diameter. Cook in hot oil about 3 minutes on each side until golden brown. Makes 4 servings.Recipe categories: Vegetables, Main dish, Greek.
