Ingredients/Components

  • salt - 1/2 tsp
  • cooking oil - 2 Tbsp
  • beaten eggs - 2 item
  • pepper - 1/8 tsp
  • clove garlic, minced - 1 item
  • snipped parsley - 2 Tbsp
  • sliced onions - 2 Tbsp
  • shredded sharp processed American cheese
  • medium eggplant, pared and cubed - 1 item
  • Ritz cracker crumbs approximately 20

How to make eggplant patties:

In covered saucepan cook eggplant in boiling water until tender, about 5 minutes; drain well and mash. Stir in crumbs, cheese, egg, parsley, onion, garlic, salt and pepper. Shape into 8 patties about 3-inches in diameter. Cook in hot oil about 3 minutes on each side until golden brown. Makes 4 servings.
