Ingredients/Components
- oil - 3 Tbsp
- 5 oz
- parsley flakes - 2 Tbsp
- chopped onions - 2 Tbsp
- slightly beaten eggs - 2 item
- cracker crumbs
- black pepper - 1/8 tsp
- medium eggplant, peeled and cubed - 1 item
- clove garlic, minced, or garlic salt - 1 item
How to make eggplant patties:
Cook eggplant until tender; drain and mash. Stir in crumbs, cheese, eggs, parsley, onion, garlic, salt and pepper. Shape into 8 patties. Cook in hot oil about 3 to 5 minutes each side, until brown.Recipe categories: Vegetables, Main dish, Greek.
