Ingredients/Components
- salt - 1/2 tsp
- cooking oil - 2 Tbsp
- pepper - 1/8 tsp
- clove garlic, minced - 1 item
- chopped green onion - 2 Tbsp
- eggs, slightly beaten - 2 item
- parsley, minced - 2 Tbsp
- sharp cheese, grated - 5 oz
- Ritz cracker crumbs
- medium eggplant, pared and cubed - 1 item
How to make eggplant patties:
In covered saucepan, cook eggplant in boiling water until tender. Drain well and mash. Stir in crumbs, cheese, eggs, parsley, onion, garlic, salt and pepper. Shape into 8 patties. Cook in hot oil about 3 minutes on each side until golden brown.Recipe categories: Vegetables, Main dish, Greek.
