Ingredients/Components

  • salt - 1/2 tsp
  • cooking oil - 2 Tbsp
  • pepper - 1/8 tsp
  • clove garlic, minced - 1 item
  • chopped green onion - 2 Tbsp
  • eggs, slightly beaten - 2 item
  • parsley, minced - 2 Tbsp
  • sharp cheese, grated - 5 oz
  • Ritz cracker crumbs
  • medium eggplant, pared and cubed - 1 item

How to make eggplant patties:

In covered saucepan, cook eggplant in boiling water until tender. Drain well and mash. Stir in crumbs, cheese, eggs, parsley, onion, garlic, salt and pepper. Shape into 8 patties. Cook in hot oil about 3 minutes on each side until golden brown.
