Ingredients/Components
- eggs, beaten - 3 item
- Parmesan cheese - 1/2 c
- oregano - 1 Tbsp
- olive oil - 1 item
- Italian style bread crumbs - 1 item
- grated Mozzarella cheese
- medium size eggplants - 2 item
- tomato sauce Italian style - 5 6
How to make eggplant parmesan:
Peel and slice eggplants. Dip eggplants in egg mixture; then coat with bread crumbs. Saute in olive oil. Layer in a casserole dish:1. Eggplant on bottom, sprinkle with oregano and cover with layer of sauce.
2. Eggplant, sprinkle with Parmesan cheese and layer of sauce.
3. Eggplant, Mozzarella cheese and layer of sauce.
Bake in a 400° oven for 1 hour.
