Ingredients/Components
- eggs - 2 item
- salt - 1 tsp
- pepper - 1/2 tsp
- Parmesan cheese - 1/4 c
- cans tomato sauce - 2 item
- Italian seasoning - 1 Tbsp
- olive oil - 1 item
- Italian bread crumbs - 1 item
- mild Cheddar cheese - 1/2 lb
- Mozzarella cheese, thinly sliced - 3/4 lb
- medium eggplants - 2 item
How to make eggplant parmesan:
Slice eggplant 1/4-inch thick. Dip slices into bowl with beaten eggs then coat eggplant with mixture of bread crumbs, salt and pepper. Fry in hot olive oil.
