  • cans tomato sauce - 2 item
  • Italian seasoning - 1 Tbsp
  • olive oil - 1 item
  • Italian bread crumbs - 1 item
  • mild Cheddar cheese - 1/2 lb
  • Mozzarella cheese, thinly sliced - 3/4 lb
  • medium eggplants - 2 item

How to make eggplant parmesan:

Slice eggplant 1/4-inch thick. Dip slices into bowl with beaten eggs then coat eggplant with mixture of bread crumbs, salt and pepper. Fry in hot olive oil. When lightly browned remove from oil and drain on paper towels. Mix tomato sauce and Itali
