Eggplant casserole
Ingredients/Components
- milk - 1 c
- egg - 1 item
- margarine - 2 tsp
- salt and pepper to taste - 1 item
- dash of Worcestershire sauce - 1 item
- onion, chopped - 1/2 item
- dash of Tabasco sauce - 1 item
- small bell pepper - 1/2 item
- slices toast - 2 item
- grated cheese sharp - 1/2 c
- medium eggplant, peeled and diced - 1 item
How to make eggplant casserole:
Boil eggplant until tender and drain well. Add margarine and milk. Crumble toast into the mixture; add other ingredients with salt and pepper to taste. Add a dash of Tabasco sauce and Worcestershire sauce. Grate a small amount of cheese on top. Bake at 350° for 30 minutes.Recipe categories: Side dish, Vegetables, Casseroles.
