Ingredients/Components
- pkg - 1 oz
- cloves garlic, minced - 2 item
- Parmesan cheese - 1/3 c
- can tomato sauce - 1 oz
- salt and pepper - 1 item
- onion, chopped - 1 item
- dried basil - 1/2 Tbsp
- large eggplant, peeled and cubed - 1 item
How to make eggplant casserole:
Cook eggplant and onion in boiling water for 5 minutes, drain well and place in a lightly greased 1 1/2-quart casserole dish. Top with Mozzarella cheese. Mix together tomato sauce, basil, garlic and salt and pepper to taste. Simmer for 15 minutes.Recipe categories: Side dish, Vegetables, Casseroles.
