  • salt and pepper to taste - 1 item
  • medium onions - 2 item
  • medium bell pepper - 1 item
  • large tomato - 1 item
  • large eggplant - 1 item

How to make eggplant casserole:

Peel and dice eggplant. Saute eggplant in small amount of butter. Slice tomatoes, pepper and onions. Put a layer of each ingredient into casserole dish. Top with grated cheese. Bake at 350° for 30 minutes.
