Ingredients/Components
- grated cheese - 1 c
- salt and pepper to taste - 1 item
- medium onions - 2 item
- medium bell pepper - 1 item
- large tomato - 1 item
- large eggplant - 1 item
How to make eggplant casserole:
Peel and dice eggplant. Saute eggplant in small amount of butter. Slice tomatoes, pepper and onions. Put a layer of each ingredient into casserole dish. Top with grated cheese. Bake at 350° for 30 minutes.Recipe categories: Side dish, Vegetables, Casseroles.
