Ingredients/Components
- sugar - 1 Tbsp
- salt - 1/2 tsp
- egg, beaten - 1 item
- pepper - 1/4 tsp
- grated cheese - 1 c
- small onion, chopped - 1 item
- melted oleo - 2 Tbsp
- medium eggplant - 1 item
- bread crumbs or crushed saltines - 1 c
How to make eggplant casserole:
Peel and cube eggplant. Cook in 3/4 cup water until tender. Drain; add to other ingredients. Mix well. Pour into greased baking dish. Sprinkle 1/2 cup cheese on top. Bake 30 minutes at 350°.Recipe categories: Side dish, Vegetables, Casseroles.
