  • sugar - 1 Tbsp
  • salt - 1/2 tsp
  • egg, beaten - 1 item
  • pepper - 1/4 tsp
  • grated cheese - 1 c
  • small onion, chopped - 1 item
  • melted oleo - 2 Tbsp
  • medium eggplant - 1 item
  • bread crumbs or crushed saltines - 1 c

How to make eggplant casserole:

Peel and cube eggplant. Cook in 3/4 cup water until tender. Drain; add to other ingredients. Mix well. Pour into greased baking dish. Sprinkle 1/2 cup cheese on top. Bake 30 minutes at 350°.
