  • can cream of chicken soup - 1 item
  • soup can milk - 1 item
  • pie crust dough - 1 item
  • diced chicken, cooked

How to make easy chicken pot pie:

Preheat oven to 350°. Line bottom of a large ovenware pan (disposable aluminum deep-sided cake pan) with crust up the sides also. Lightly brown crust in oven and set aside.

In a saucepan, cook vegetables for about 10 minutes in 1 cup water. Add soup, stir well. In a small bowl, mix together the milk and cornstarch. When vegetable-soup mixture is boiling, add milk mixture and stir until mixture thickens (adjust cornstarch to suit your idea of thick, always mix cornstarch with liquid before adding to a hot mixture). Salt and pepper to taste. Remove from heat. Add cooked chicken meat and stir well. Pour into prepared crust and top with an additional crust (or pour directly into pan if not using bottom crust). Brown in oven. Cool 10 minutes before serving.

Options: Use mixed vegetables in place of peas and carrots. Add diced onions to vegetables before cooking. Buy diced chicken from Sams Club or Schwans. Soo easy. Triple recipe and freeze extras for later.

This recipe freezes well. Just heat in 350° oven for about 1 hour.
