Easy chicken enchiladas
Ingredients/Components
- garlic powder - 1/4 tsp
- chopped onion - 3/4 c
- chili powder - 1 2
- can cream of chicken soup - 1 item
- chopped bell pepper - 3/4 c
- picante sauce
- flour tortillas - 12 item
- shredded cooked chicken
- sour cream or plain yogurt - 1 c
- shredded cheese* - 1 c
How to make easy chicken enchiladas:
* I use American and Monterey Jack.Combine chicken, 1/2 cup picante sauce, soup, sour cream, bell pepper, onion and seasonings; mix well. Spoon about 1/3 cup down center of each tortilla; roll up and place, seam side down, in lightly greased 13 x 9-inch pan. Spoon remaining picante sauce over enchiladas. Cover pan with foil and bake at 350° for 25 minutes or until hot. Remove foil, sprinkle with cheese. Let stand 5 minutes.
