Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1 tsp
- eggs - 3 item
- salt - 1/2 tsp
- flour - 4 c
- brown sugar - 2 c
- butter - 1 c
- water - 1/2 c
- soda - 1 tsp
- Add eggs; beat well
How to make date pinwheels:
Cream the butter and sugar together. Add eggs; beat well. Mix the dry ingredients together. Add to the creamed butter, sugar and eggs. Divide the dough into 3 parts and wrap in wax paper. Chill overnight. (This makes it easier to spread the filling on the dough.)Filling:2 c. dates, cut in pieces1/2 c. sugar1/2 c. water Cook over low heat until a paste forms; stir often. Cool the filling.Roll out each ball of dough to about 1/4 inch thick. Spread 1/3 of the filling on each sheet of dough. Roll each as a jelly roll. Wrap in wax paper and place in refrigerator overnight. Cut in thin slices and bake at 400° for 10 to 12 minutes.
(This cookie dough can be stored in the refrigerator for 2 to 3 weeks and baked as you need them.) These cookies are delicious served warm with coffee.
