Cucumber soup
Ingredients/Components
- milk
- lemon juice - 1 Tbsp
- curry powder - 1/2 tsp
- vegetable stock - 2 c
- cumin - 1/4 tsp
- large peeled cucumber - 1 item
- salt, pepper and chives - 1 item
How to make cucumber soup:
Dice cucumber. Place all ingredients into blender. Blend until smooth. Store in refrigerator for several hours or overnight.Suggested garnish for each serving with cucumber slice and chopped chives. Serve with croutons and carrot sticks for a light and refreshing snack or meal.
