Ingredients/Components

  • flour - 3 Tbsp
  • salt and pepper - 1 item
  • chopped chives - 1/4 c
  • parsley sprigs - 6 item
  • butter or oleo, softened - 3 Tbsp
  • celery leaves - 1/4 c
  • dill fresh or dried - 1 item
  • cans chicken stock - 2 item
  • chopped cucumber, seeds removed - 4 c
  • half and half or 1 can Pet milk - 2 c

How to make cucumber soup:

Blend all ingredients, except salt and pepper, in blender and puree until almost smooth. You may have to blend in batches. Pour into saucepan and heat slowly, stirring often, until almost a boil. Season with salt and pepper. This can be served hot or cold. Garnish with parsley or dill sprigs. Pass the croutons. This is a wonderful way to use all those cucumbers in the garden.
