Crunchy potato balls
Ingredients/Components
- flour - 2 4
- egg, beaten - 1 item
- pepper - 1/4 tsp
- mustard - 1 tsp
- crushed cornflakes
- shredded Cheddar cheese - 1 c
- mayonnaise - 1/3 c
- very stiff mashed potatoes - 2 c
- finely chopped, fully cooked ham - 2 c
How to make crunchy potato balls:
In a bowl, combine the potatoes, ham, cheese, mayonnaise, egg, mustard and pepper; mix well. Add enough flour to make a stiff mixture. Chill thoroughly. Shape into 1-inch balls; roll in cornflakes. Place on a greased cookie sheet. Bake at 350° for 25 to 30 minutes. Serve hot.Recipe categories: < 60 mins, Lunch/snacks, Appetizers.
