  • flour - 2 4
  • egg, beaten - 1 item
  • pepper - 1/4 tsp
  • mustard - 1 tsp
  • crushed cornflakes
  • shredded Cheddar cheese - 1 c
  • mayonnaise - 1/3 c
  • very stiff mashed potatoes - 2 c
  • finely chopped, fully cooked ham - 2 c

How to make crunchy potato balls:

In a bowl, combine the potatoes, ham, cheese, mayonnaise, egg, mustard and pepper; mix well. Add enough flour to make a stiff mixture. Chill thoroughly. Shape into 1-inch balls; roll in cornflakes. Place on a greased cookie sheet. Bake at 350° for 25 to 30 minutes. Serve hot.
