Crunchy potato balls
Ingredients/Components
- all-purpose flour - 2 4
- egg, beaten - 1 item
- pepper - 1/4 tsp
- prepared mustard - 1 tsp
- 4 oz - 1 c
- mayonnaise - 1/3 c
- cups crushed cornflakes - 1-3/4 item
- very stiff mashed potatoes - 2 c
- finely chopped, fully cooked ham - 2 c
How to make crunchy potato balls:
In a bowl, combine the potatoes, ham, cheese, mayonnaise, egg, mustard and pepper; mix well. Add enough of the flour to make a stiff mixture. Chill. Shape into 1 inch balls; roll in cornflakes. Place on a greased baking sheet. Bake at 350 degrees for 25 to 30 minutes. Serve hot.Yield: about 6 dozen.
