Creamy rice pudding
Ingredients/Components
- sugar - 2 c
- eggs - 2 item
- vanilla to taste - 1 item
- Carolina rice - 1 lb
- plus 1 pt - 1 gal
- raisins, boiled in water and drained optional - 1 item
How to make creamy rice pudding:
Heat milk. Before it boils, add rice and 1/2 the sugar. Bring to a boil, stirring constantly. Keep on medium to medium-high heat and cook 25 to 30 minutes, stirring constantly.Beat remaining sugar and eggs in bowl and stir in vanilla. Take rice mixture off stove. Add a little rice mixture to egg mixture. Try not to get too much rice into egg mixture. Add egg mixture to rice and milk. Keep stirring. If this does not start to thicken just a little, put it back and bubble a little until it just begins to thicken. It thickens as it cools so don't let it get too thick before you stop. Add raisins, if desired. Cool and refrigerate.
