Ingredients/Components

  • cream cheese - 2 (8
  • vanilla - 1 Tbsp
  • eggs, well beaten - 12 item
  • lemon extract - 1 Tbsp
  • can evaporated milk - 1 item
  • cinnamon to taste - 1 item
  • regular milk - 1/2 c
  • sugar or less
  • raw rice, cooked and drained

How to make creamy rice pudding:

Cream sugar and cream cheese together. Beat in eggs, one at a time. Then add milk, vanilla and lemon. Stir in rice and cinnamon. Bake in greased 9 x 13 dish. Bake for 1 hour at 350°. Check after 45 minutes. When knife inserted in center comes out clean, it is done. Rice stays on bottom and the top is like custard and creamy.
