Creamy rice pudding
Ingredients/Components
- long grain rice - 2/3 c
- water - 2 c
- salt - 1/8 tsp
- milk - 3 c
- half and half - 1 c
- vanilla - 1 tsp
- large egg yolks - 2 item
- cinnamon optional - 1 item
How to make creamy rice pudding:
In a medium pan, heat rice, water and salt to boiling over medium heat. Reduce heat to low; cover. Simmer 20 to 25 minutes or until rice is tender and all liquid is absorbed. Add milk, half and half and sugar. Mix; heat to boiling. Reduce heat and simmer 30 minutes, stirring occasionally.In a small bowl, mix egg yolks with one cup rice mix. Pour egg mix into hot rice. Simmer 5 to 8 minutes, stirring with a wooden spoon. Add vanilla. Serve warm at room temperature or cold. Dust with cinnamon.
