Ingredients/Components

  • vegetable oil - 1/4 c
  • large yellow onion, chopped - 1 item
  • cloves garlic, minced - 2 item
  • medium size green pepper, seeded and chopped into 1/4-inch pieces - 1 item
  • Hungarian paprika available in specialty stores or use regular paprika - 2 Tbsp
  • cayenne pepper - 1/4 tsp
  • chicken stock homemade or prepared - 1/2 c
  • low-fat yogurt - 1 c
  • all-purpose flour - 1 Tbsp
  • chopped parsley - 1 item
  • salt to taste - 1 item
  • freshly ground black pepper - 1 item
  • hot cooked noodles - 2 c

How to make creamy chicken paprikash:

This is a lean and light dish that is ready to eat in 30 minutes.

Rinse the chicken breasts, split into 4 pieces, and pat dry. Heat the oil in a medium size skillet. Add chicken breasts and saute until well browned. Remove chicken and add the onion, garlic, green pepper and spices. Saute until vegetables are tender and blended with spices. Add chicken to skillet with chicken stock. Cover and cook for 10 minutes or until chicken breasts are tender. Blend the yogurt with the flour. Reduce temperature of the chicken mixture and add yogurt, stirring through the mixture. Heat for 2 more minutes. Add salt and pepper to taste. Sprinkle with chopped parsley. Serve with hot noodles.
