Cream of potato soup
Ingredients/Components
- milk - 2 c
- flour - 2 Tbsp
- butter - 2 Tbsp
- small onion, chopped fine - 1 item
- salt and pepper to taste - 1 item
- medium white potatoes, peeled and quartered - 4 item
- large carrot, peeled, shredded and chopped fine - 1 item
How to make cream of potato soup:
Combine potatoes, carrots and onions. Cover with water and boil until tender. Rub through a coarse sieve, saving the stock. Prepare a thin white sauce with the butter, flour and milk; add to the vegetable stock. Reheat and season; beat with a rotary beater. Serve hot.
