Ingredients/Components

  • salt - 3 tsp
  • beaten eggs - 4 item
  • chopped celery - 2 c
  • chopped onions
  • chopped parsley - 4 Tbsp
  • black pepper - 2 tsp
  • stick oleo - 1 item
  • poultry seasoning
  • broth or bouillon - 9 10
  • large loaf bread - 1 item
  • chopped green pepper bell - 4 Tbsp
  • batch cornbread see recipe in book - 1 item
  • or 4 beads garlic, cut fine - 3 item
  • chopped giblets about 3 chicken livers, gizzards and necks

How to make cornbread dressing:

Boil giblets in lightly salted water. Remove meat from necks. Chop all fine or put through meat grinder. Reserve liquid for broth. Use bouillon to make up remainder of broth needed for 9 or 10 cups.

Cut loaf of bread into cubes and toast in oven or toast all slices in oven, both sides of bread, or toast in toaster several times to dry out moisture from bread.

In large roaster pan, crumble previously baked cornbread very fine. Mix in bread cubes or if bread slices were toasted, break them up in small pieces and mix in with cornbread.

In separate skillet, melt one stick of oleo on low to moderate fire. Add chopped celery, onions, garlic and green pepper. Saute until vegetables become clear and tender (not brown or burnt). Add chopped parsley; stir a few minutes, then add all to roaster of cornbread and bread.

Add chopped giblets. Add salt, black pepper and poultry seasoning (place no extra spices or extra sage). Mix. Add beaten eggs. Mix, then start adding broth and mix well. Add broth until entire mixture is a little more moist than you want the final dressing to be (the moisture dries out in the oven). Bake dressing in roaster pan at 350° about 30 to 45 minutes, stirring several times.

Note: If you mix the dressing the day before, do not bake. Refrigerate overnight and bake the next morning. It may take more time to cook after being refrigerated.
