  • sugar - 2 Tbsp
  • salt - 1/4 tsp
  • water - 3/4 c
  • baking powder - 3 tsp
  • vegetable oil - 2 Tbsp
  • large egg - 1 item
  • cornmeal - 2 c

How to make corn muffins:

Preheat oven to 400°. Combine all the ingredients in a mixing bowl. Stir to blend. Pour into 9 lightly oiled muffin cups. Bake for 15 to 20 minutes, or until golden brown. Makes 9 muffins. One muffin = 121 calories, 2 g. protein, 18 g. carbohydrate and 6 g. fat.
