Ingredients/Components

  • sugar - 1/3 c
  • milk - 2/3 c
  • salt - 1/2 tsp
  • flour - 1 c
  • baking powder - 1 Tbsp
  • egg - 1 item
  • cornmeal - 1 c
  • olive oil - 1/3 c
  • corn fresh, canned or frozen, thawed - 1 c

How to make corn muffins:

Combine the dry ingredients in a large bowl. Combine the liquid ingredients in another bowl. Add the liquid ingredients to the dry ingredients. Add the corn. Stir just until blended. Spoon batter into paper lined muffin cups. Bake at 400° for 20 minutes. Yields 12 muffins.
