  • eggs - 2 item
  • salt - 1/8 tsp
  • buttermilk - 2 c
  • baking soda - 2 tsp
  • vegetable oil - 1/4 c
  • honey - 1/2 c
  • white all-purpose flour - 2 c
  • yellow cornmeal - 2 c
  • medium apple, peeled and finely chopped - 1 item

How to make corn muffins:

Preheat the oven to 400°. Coat a 12-cup muffin tin with vegetable cooking spray or line with paper muffin cups. In a large bowl, combine the dry ingredients. In a separate bowl, whisk the eggs with the buttermilk, honey and oil. Add the mixture to the dry ingredients. Add the apple and stir until just combined, but not overmixed. Fill the prepared muffin cups 3/4 full and bake for about 15 minutes or until golden. Remove the muffins from the pan. Allow to cool slightly and serve warm. Makes 18 large muffins.
