  • shortening - 1 c
  • all-purpose flour - 4 c
  • yellow cornmeal
  • frankfurters - 1 lb
  • Basic Cornmeal Mix - 1 c

How to make corn dogs:

To Make 10 Cups Basic Cornmeal Mix:4 c. yellow cornmeal4 c. all-purpose flour1/2 c. sugar1/4 c. baking powder2 tsp. salt1 c. shortening Pat frankfurters dry with paper towels. Heat oil (2-inches) to 365°. Mix cornmeal mix, milk and egg. Dip franks into batter, allowing excess batter to drip into bowl. Fry, turning once, until golden brown, about 4 minutes. Drain on paper towels. Makes 5 servings.

To prepare and store 10 cups cornmeal mix, mix cornmeal, flour, sugar, baking powder and salt in 4-quart bowl. Cut in shortening until mixture resembles fine crumbs. Cover and store in airtight container at room temperature no longer than 3 months.
